This is the 6th annual Ceviche and Aguachile Festival. Restaurants and vendors will highlight their best Ceviche and Aguachile recipes. Ceviche (typically pronounced seh-VEE-chay) is basically seafood marinated in citrus juice, which “cooks” it. It’s commonly found along coastal parts of Latin America and in some Caribbean nations as well. Popular seafood options include shrimp, lobster, conch, octopus, maimula (often called horse conch), squid, snapper, and more, depending on location.
As its name implies, Aguachile basically translates to “chili water,” and it is a much spicier version of ceviche. Aguachile is also pretty much limited to Mexico itself, reportedly originating in the Sinaloa region.
The event is free to attend and is held at Lázaro Cárdenas Park on July 29th, 2018, from 12- 7 pm. You can wander through the various food booths and choose to sample what you like. Prices are affordable with small plates from $15 to $35 Pesos each a wide variety of combinations will be available using ingredients such as tuna, octopus, fish, shrimp, oysters, and scallops.
Of course, this is Mexico so expect to see Dj’s, live bands, and, for the kids, a special playground with games and workshops.

Puerto Vallarta will enjoy various civic ceremonies, traditional dances, commemorative parades, exhibitions, mariachis, food and lots of colors.
The Hidalgo Park, the Plaza de Armas, Los Arcos del Malecón and all of Puerto Vallarta dress up to celebrate the Independence Day.
